All varieties fermented separately on the skins for 25 days with no added yeasts, and then matured in Slovenian oak barrels for 11 months. Smoky, earthy, dried tobacco, but also very elegant and pleasant with lots of minerality. Great with smoked, fatty fish or scallops, pork loin, veal roasts, stews, lentils, and smoked cured meats
